Masala Dosa Recipe

Masala dosa is a very trendy recipe . This recipe explains how to make dosa batter and Potato masala . Its a delicious breakfast recipe and a healthy too . If the batter is made perfectly then the dosa will come out crisp and golden . Batter can be stored for a week and used when ever desired .

I have shared how to make masala dosa batter ,potato Poriyal recipe in step by step method with a detailed pictures below.

Add 2 cups of rice.

Add 1/2 cups of urad dal

Add fenugreek seeds.

Wash in a plenty of water. Soak the rice for atleast 4-5 hours.

In a blender add the soaked rice and dal grind them. Add little water when ever needed. If you are using aged dal it doesn’t get frothy even if it is grind smooth.

Blend it to a fine batter. Transfer the batter to a large utensil or container.

Set the batter aside in a warm place for at least 6 hours or over night until the batter ferments and rises well. The batter must look fluffy but not sour. Now add salt and baking soda mix well.

FOR POTATO PORIYAL

Wash the potatoes. Boil potatoes using pressure cook for about 2-3 whistle or cook using microwave for about 8-10 minutes. once it cools down peel the skin off from the potato.

In a wok or kadai heat oil add mustard seeds when it begin to splutter add curry leaves and urad dal/ black lentils. Stir and saute till the dals become golden.

Add chopped onions and salt saute till the onions changes its color transparent.

Add green chilies and turmeric powder. Stir well.

Now add potatoes and stir very well. cover and simmer the potato for 4-5 minutes on a low flame.

The potatoes should combine evenly with the onion mixture.

Grease your tava with few drops of oil or sprinkle water and brush it . Batter must be a thick pouring consistency. Heat the pan , pour a ladle full of batter

Immediately spread the batter

Spread the dosa batter in a circular way on a pan cook dosa on a medium flame.

Sprinkle some oil on top and edges.

Cook the dosa till its base become golden brown. flip the other portion and add the Potato Poriyal masala and cook a bit.

Fold the Dosa and serve Hot with butter.

INGREDIENTS FOR BATTER

  • 1/2 Cup Urad dal ( Split black lentils )
  • 2  Cup par boiled rice ( Ukda Chawal )
  • 1 tsp fenugreek seeds
  • Salt as needed
  • 1/4 tsp baking soda

INGREDIENTS FOR PORIYAL

  • 2 large potatoes
  • 3 large onions
  • 2 green chili
  • 1 teaspoon urad dal(split black gram lentils)
  • 2 tablespoon fresh chopped coriander leaves
  • 1 1/2 tablespoon oil
  • 1/4 tsp turmeric powder
  • salt as needed
  • 1 sprig curry leaves

INSTRUCTION FOR BATTER :

  • Add 2 cups of rice.
  • Add 1/2 cups of urad dal and 1 teaspoon of fenugreek seeds.

  • Place the moulds in a wide pan add water place the moulds for steam.
  • Cover the lid and steam for 15 minutes on a medium flame.
  • Remove from the heat open the in lid remove the idli stand. When cooled with the help of a spoon remove from the mould . Place them on a plate. Serve idli with a chutney or sambhar.
