Broccoli is a nutritional powerhouse full of vitamins, minerals and fiber. Broccoli soup is very smooth creamy and comforting soup made with a variation of milk and cream. With an addition of vegetables and pepper cooked in one pot gets ready with less than 30 minutes.

In a sauce pan boil water let the water boil vigorously add broccoli and chopped carrots boil for 2 minutes.
Strain the broccoli and carrots. Keep the vegetable stock aside for later use.
In a kadai melt butter over moderately low heat add chopped garlic saute for a minute. Now add spring onions stir well.
Now add cooked broccoli, carrots and sweet corn.
Add vegetable stock, salt and pepper powder.
In a bowl add cornflour pour little milk to make a corn starch. I have used milk for more Creamy taste. You can add water instead of milk as per your choice.
Add cornstarch to the soup stir continuosly to avoid any lumps.
Add cream stir until it’s combine together add in extra salt and pepper powder if desired.
Serve in a soup bowl garnish with spring onions. Serve hot with bread rolls.
INGREDIENTS
- 1 carrot
- 1/4 cup chopped spring onions
