Thandu keerai recipe ( Spinach Greens) is a stir fried with a simple seasoning of curry leaves , chana dal and whole red chili. The beauty of this keerai is one can use the stems as well as the leaves. The stems are easy to cook and quite juicy. In a kadai heat oil add mustard seeds when it begin to crackle add curry leaves, whole red chili.
Allow the dal to roast and become golden brown.
Add onions saute till the onions changes transparent.
In a blender add peanuts, green chili and garlic cloves. blend coarsely.
Add the peanut powder to the onion mixture add salt as needed.
Roughly chopped the keerai as the stem of this green is easy to cook and quite juicy remove only the root part, soaking green leafy vegetables in a salted water can help reduce the microorganisms that infest on these vegetables.
Add keerai to the onion and peanut mixture.
Simmer and cook until the thandu keerai changes its texture to soft. turn off the heat. Serve thandu keerai along with steam rice , ghee and dal.

- 1 bunch thandu keerai/ Amarnath leaves
- 2 medium size onions
- 1 sprig curry leaves
- 1 whole red chili
- 1 tablespoon chana dal
- 1 teaspoon mustard seeds
