Scrambled eggs/ anda bhurji

This is yet another Egg Bhurji is another egg recipe which is also called as one way of scrambled eggs recipe where the eggs are scrambled and cooked in masala. This recipe is also called as anda bhurji.

I have shared my recipes in a detailed pictures.

In a iron skillet or wok heat oil add chopped onions

Peel ,wash and chopped the potatoes add in a bowl add water.

Microwave the potatoes for 5_7 minutes till it’s partly cook.

In a blender add corn and cottage cheese,add green chillies grind to a rough paste.

Add the corn paste to a onion mixture,add boiled potatoes,red chilli powder saute for 5 minutes.

Whisk eggs in a bowl .Add them to the onion ,potato mixture.

Add the rest of the green chopped spring onions to it .cover the lid .let the eggs cook for 5 minutes. scrambled the eggs on a high flame.

The scrambled eggs are ready to serve with bread or roti.

Ingredients:

  • Spring onions 1 bunch
  • Potato 1
  • Corn 1/4 cup
  • Cottage cheese/ paneer 2 tbsp
  • Green chilli 1
  • Red chilli powder 1 tsp
  • Salt as needed
  • Eggs 3
  • Oil

Instruction:

  • Peel,wash and chopped potatoes microwave for 5-6 minutes till the potatoes are almost done.keep aside.
  • In a iron skillet or wok heat oil add chopped spring onions saute for few minutes.
  • In a blender add corn ,cottage cheese and green chilli grind to a rough paste.
  • Add the paste to onion mixture .Add the boiled potatoes to it.
  • Whisk eggs in a bowl add the eggs to the onion mixture .Add the rest of the green spring onions .lower the flame.cover the lid and cook for 5 minutes .
  • Finally scrambled the eggs on a high flame till the eggs are cooked well.Turn off the stove.
  • Scrambled eggs goes well with the roti or bread.
