Measure 1/4 cup of urad dal
Add them to the pan roast them until it’s aromatic.
Let roasted urad dal cooled at room temperature add roasted urad dal to a blender.
Cool and make a fine powder.
In a mixing bowl sieve urad dal powder.
Now add rice flour
Now add salt, cumin powder and hing
Add hot oil or butter.
Add required water to knead a dough
Do not add too much water. Too much water will make the murukku absorb excess oil. Murukku has to be made as soon as you make a dough.
Grease the murukku mould with little oil also grease the star shape plate. Divide the dough into small portions roll them to a cylindrical shape. Press the dough to make spirals either in a butter paper or flat hole ladle.
Heat oil in a kadai. Place the murukku ladle in a kadai gently slide them into the oil.
Fry murukku on a medium flame till light golden brown flip them gently. Fry the other side.
Drain murukku in a kitchen tissues to remove excess oil. Cool completely and store in an airtight container.
